Avocado and Peach Salad

This sweet salad made with peach, avocado and raisins can be served in a scooped-out avocado "bowl." Adults and children love this salad.

Ingredients

Servings   4   Serving Size   1 avocado boat

  • 2 small avocados
  • 2 medium peaches (diced)
  • 1/4 cup onion (finely diced)
  • 1 lemon (juiced)
  • 2 tablespoons raisins
  • 1/8 teaspoon cayenne pepper
  • 1 teaspoon fresh thyme
  • to taste salt and pepper (optional)

  1. Cut the pitted avocados in half; you will need the skin to serve the salad.
  2. Carefully place the avocado in a medium bowl. Add lemon juice, cayenne pepper, fresh thyme, salt (optional), pepper (optional), and mash until creamy.
  3. Wash, dry, and dice the peaches and add into avocado mixture along with the raisins and finely diced onion. Stir until evenly combined.
  4. Divide the salad into 4 servings and spoon into avocado skins.
