Avocado Chicken Waldorf Salad

Sweet, crunchy and delicious, this chicken waldorf salad is a fresh addition to a meal or as a meal itself. Wrapped in lettuce leaves, the chicken, avocado, sweetness of the apple and crunchiness of walnuts pair together to create a burst of flavor in your mouth!

Ingredients

  • 1/4 cup apple cider
  • 2 tablespoons vegetable oil
  • 1 tablespoon cider vinegar
  • 1 teaspoon mustard
  • 2 teaspoons sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup chicken (cooked, diced)
  • 1 large red apple (cored, diced)
  • 1 avocado (pitted, peeled, diced)
  • 3 celery stalks (diced)
  • 1/2 cup walnuts (toasted, roughly chopped)
  • 1/3 cup golden raisins
  • 8 romaine lettuce leaves

  1. In a small bowl, whisk together cider, oil, vinegar, mustard, sugar, salt, and pepper until well combined.
  2. In a medium bowl, combine apples, chicken, avocados, celery, walnuts, and raisins; toss gently with dressing.
  3. Divide salad and spoon on top of romaine leaves.
